Just because we're talking about chemistry doesn't mean we can't be delicious! Food-grade citric acid is a multi-functional ingredient in cooking and baking. Naturally derived (often from lemons or sugar fermentation), it's used to enhance flavors , balance acidity , and extend the shelf life of your preparations.

In confectionery, it's essential for adding a burst of flavor to sour candies, gums, jellies, and syrups. But it's also useful for adjusting the pH of jams , promoting pectin setting , and stabilizing egg whites in certain recipes. In short, a must-have to keep on hand, especially if you enjoy (successful) experimentation in the kitchen!

Suggestions for use:
– To add a tangy touch to your homemade candies, gums or fruit pastes
– Add to jams or jellies to optimize setting
– Useful for balancing acidity in fruit ganaches

Instructions for using citric acid:
- In jam, we are looking for a pH close to 3.1 (3 to 3.2) with an input of 3 g/litre (i.e. 0.3%).
- As an acidity corrector, it provides an acidity that improves the preservation of food (meats, deli meats, prepared dishes) by reducing the spectrum of bacteria likely to grow on it.
- Citric acid also prevents the discoloration of fruits and the browning of canned or stored products after cutting (antioxidant like ascorbic or acetic acid).
