This Lescure professional puff pastry butter, with 84% fat content, is the essential ingredient for perfect puff pastries, croissants, pain au chocolat, and kouign-amann like a true artisan baker. Thanks to its exceptional plasticity , it spreads without breaking, withstands rolling, and won't melt in your hands at the first sign of heat. Made from the milk of Charolais and Limousin cows from the Poitou-Charentes region , it imparts an intense, slightly nutty, milky flavor that transforms simple dough into exceptional pastries. And let's be honest: once you've bitten into a croissant made with this butter, you'll never be able to buy industrial croissants again without a sigh of despair.

Product information

A puff pastry that makes all the difference

You take a batch of golden, flaky croissants out of the oven, redolent of fresh butter . Their layers separate delicately under your fingers, revealing an airy, melt-in-your-mouth interior with that authentic buttery flavor found only in the finest bakeries. The crust is caramelized, crisp , and slightly glossy. No butter that has rendered out during baking, no collapsed layers, no dough that has soaked up the butter like a sponge. Just flaky perfection . That's exactly what you get with Lescure 84% PDO Poitou-Charentes puff pastry butter . And yes, your loved ones will be asking if you've changed bakeries.

Not an ordinary butter

Pastry butter is not a regular butter. With its 84% fat content and reduced water content , it possesses two essential superpowers in pastry making:

  • Unparalleled plasticity : it remains flexible and malleable without breaking or melting during turning, even after several turns.
  • Impeccable puff pastry : with less water, it does not make the dough soggy and creates clean, well-defined layers , for a puff pastry that rises high and remains crispy.

It is ideal for:

  • Croissants and pain au chocolat (the absolute benchmark)
  • Puff pastry (king cakes, mille-feuilles, palmiers)
  • Puff pastry brioches and kouign-amann
  • Flaky milk breads and Danish pastries

And thanks to the Poitou-Charentes PDO label , you are guaranteed butter produced in a region of butter excellence, with a milky and fruity taste recognized as one of the best in the world.

Ideas for using it this weekend

With Lescure 84% puff pastry butter , treat yourself to:

  • Ultra-flaky homemade croissants : the ultimate baking project for a rainy weekend. Allow 3 days for a result worthy of a Meilleur Ouvrier de France (MOF) baker.
  • An extra-large puff pastry galette des rois : with inverted puff pastry and this special butter for lamination, your guests will fight to get the bean.
  • Crispy caramelized palmiers : perfect for a quick snack or a gourmet coffee at home.
  • An authentic Breton kouign-amann : the addictive caramelized Breton cake, even better with superior quality butter.
  • Danish pastries filled with pastry cream and fresh fruit : for a show-stopping Sunday brunch.

The little extras that make all the difference

To get the best from your Lescure 84% puff pastry butter :

  • Work at the right temperature : the butter for lamination should be 14-16°C to remain pliable without melting. Too cold, it will crack the dough; too hot, it will melt into it. A kitchen thermometer is your best friend.
  • Prepare your square of butter : flatten it between two sheets of parchment paper into a regular 20x20 cm square before starting the lamination process. The regularity of the butter ensures the regularity of the lamination.
  • Respect the resting times : between each turn, let your dough rest for at least 30 minutes in the refrigerator . Patience is the key to the perfect croissant.
  • Keep it well wrapped , away from odors: butter absorbs everything like a sponge, and having smoked fish nearby in your refrigerator would be a disaster.

COMMENT COMMANDER ???
