Valrhona Azelia Milk Chocolate Beans

Ingredients : cocoa butter, whole milk powder, sugar, hazelnuts, cocoa beans, brown sugar, natural vanilla extract, emulsifier (soy lecithin), barley malt extract. May contain traces of nuts, milk and egg proteins, gluten, and peanuts.

Milk chocolate couverture in nibs for:

- Chocolate making: fine moldings, ganache candy fillings, coating
- Pastries: Ganache, biscuits, mousse, decorations
- Ice cream shop: Sauces, ice creams and sorbets

Usage advice (tempering): Melt at 45-48°C, crystallization at 27-28°C, working at 29-30°C.
