Usage tips

Allow the sugar paste to reach room temperature, then knead it firmly until it becomes smooth and elastic. Lightly dust the work surface with icing sugar and roll it out to a thickness of 2 to 3 mm.

Turn the dough regularly while rolling it out to prevent it from sticking to the work surface. If small cracks appear on the edges, knead it again until you obtain a smooth texture.
