A chocolate stencil is a type of template. Place it on a guitar sheet or a chocolate transfer (see accessories), then pour tempered chocolate onto its surface to fill the cavities. Smooth it with a spatula and let it crystallize. Remove the stencil and let it harden. This creates regular shapes for decorating desserts. This stencil will give you shapes to decorate the ends of your yule logs. Since this mat is oven-safe, you can also make shortbread cookies, meringues, work with isomalt... Plenty of fun to be had, right?
