Product information

Naturally rich in polysaccharides, gum arabic is valued for its ability to stabilize mixtures without altering their taste or color. Soluble in water, it forms slightly viscous solutions that improve the texture and shelf life of many preparations. Its neutral flavor makes it a particularly popular ingredient among pastry chefs and confectioners.

What is the use of gum arabic in pastry making?

Gum arabic has many applications in pastry and confectionery.

It is notably used for:

  • to make Turkish delight with a melt-in-your-mouth texture;
  • prepare marshmallows that are softer and more stable;
  • improve the texture of cake batters;
  • to make confectionery and fruit jellies;
  • to add binding to oriental pastries such as gazelle horns , feqqas or makrouts;
  • fix edible glitter , glitter powders and decorations onto sugar, chocolate or sugar paste;
  • to make an edible glue for assembling decorations made of sugar or sugar paste;
  • to coat dried fruits, sugared almonds and confectionery.

In cake decorating , it is also highly valued for making homemade edible glue by simply mixing it with water. This preparation allows you to easily attach sugar paste flowers, pastillage decorations, or gum paste elements without leaving any visible marks.

What is the difference between gum arabic and other texturizers?

Unlike gelatin , agar-agar or pectins , gum arabic is not a gelling agent .

It acts primarily as a binder , emulsifier , and stabilizer , improving the cohesion of preparations and limiting the separation of ingredients. It provides flexibility and stability without creating a gel.

It also differs from gums like xanthan gum or guar gum , which are primarily used to thicken preparations. Gum arabic, on the other hand, is valued for its adhesive properties, its film-forming ability, and its capacity to coat products while remaining very discreet in the mouth.

Professional uses

Beyond baking, gum arabic is used in other ways:

  • in chocolate making for coating and sugaring;
  • in beverages to stabilize certain flavored preparations;
  • as a carrier for aromas thanks to its excellent adhesion power;
  • in oenology to improve the stability of certain wines.

Its 1 kg format is particularly suitable for pastry shops, confectioneries, chocolate shops, ice cream parlors and production laboratories.
