Best use before 07/2018 Flour (gruel) T45 – Bagatelle This flour is produced under the CRC® (Culture Raisonnée Contrôlée – Controled Supervised Culture) from the Tarn region. It is the purest and strongest flour there is, perfect for leavened dough, puff pastry, choux pastry and brioche bread. Le Moulin Maury’s flours are controlled by the CERTIPAQ, an independant control organism. This is the only wheat produced in France that benefits from such a qualification, which offers a maximum of guarantee to the customers.
